Stacy's Kitchen: Strawberry Passion Fruit Napoleons

A classic dessert simplified. Sweet and sour, light as air, and it doesn’t get any quicker. Passion fruit can be found in many grocery stores, I have had lots of luck finding them at Walmart. However this dessert can be made with any fruit or berries.

Strawberry Passion Fruit Napoleons
1 package butter puff pastry (I used President’s Choice). Thaw according to directions.
1/4 cup granulated sugar
2 cups sliced strawberries
2 passion fruit
1.5 cup whipping cream
1/2 cup icing sugar
1/2 tsp vanilla paste or extract

Directions:

  1. Preheat oven to 350f.
  2. Prepare a baking sheet with parchment paper.
  3. If you are using the pre-rolled pastry, stretch out one roll to its 10x10in square, if not, roll out puff pastry to a 10x10in square. Save any extra for another use.
  4. Sprinkle the sugar all over, and lightly press it into the pastry.
  5. Using a cookie cutter, or a sharp knife, cut 10 equal pieces of puff pastry.
  6. Transfer to prepared baking sheet, and use a fork or skewer to poke some holes into each piece.
  7. Bake for 10 mins, rotating the pan half way through. Set aside.
  8. In medium bowl, add cold whip cream, and beat with a hand mixer (or a whisk if you want a workout) until soft peaks form, add icing sugar, and vanilla paste, and mix until incorporated. 
  9. In a medium bowl scoop out the seeds of the passion fruit, and toss lightly with the sliced strawberries.
    10. Time to assemble, start with one pastry a large dollop of whip cream, berries and passion fruit, top with another pastry.
    11. Serve as soon as assembled. (All steps can be done in advance and assembled just before serving.)
